Vegan Chilaquiles

Chilaquiles Mixture

1 onion chopped

2 medium tomatoes chopped

2 cloves of garlic chopped

½ C green onion chopped

6 Peruvian Quinoa Tortillas

Roast onion in a frying pan without oil (this recipe is oil-free!), when translucent add garlic, shorty after add tomatoes and continue sautéing for about 3 minutes. When adding the tomatoes work on cooking the coconut mixture, after blending it.

 

Coconut Mixture

1 C coconut milk

1 clove garlic

2 Tbsp arrowroot

1 tsp lemon juice

1 tsp salt

Blend the above

Cook the above ingredients until it starts to thicken.  Add to the chilaquiles mixture and mix it well.
